I know it’s getting to be Autumn or something in many parts of the world, but here in Phoenix we are still in triple digits. Thinking of new ways to stay cool is becoming more and more challenging. We are all weary from the drain of energy from what feels like never ending months of a hot summer. But I stumbled upon a short term cure. Somehow, we are still getting watermelon. Sadly, I’m not even sure where from, cuz when I saw it I was so desperate for the cool refreshing taste, it jumped into my cart. And sure enough, it left much to be desired. So what’s a girl to do with a huge cut open watermelon that’s lost it’s mojo? Herbify the thang.
Enter Watermelon Mint Slush. I just threw the watermelon in the blender with a ton of mint and a bit of ice to cool it off and out came this beautiful slushy. Though the deep red color mirrored that of the Arizona sun, it was like drinking from a cool tropical watermelony mint infused waterfall.

Sounds yummy and refreshing. We thought of doing something like this with watermelon and freezing them in popsicle molds. Found a blog that made mango/coconut, cucumber/yogurt and strawberry chocolate freezer pops! They were really tasty. But I lost the link. Stay cool!
